The turnover figure for Hotel Management & Catering rose by 2.3% in 2013

The sector employed more than 53,000 people and microenterprises (fewer than 10 employees) comprised 94.7% of establishments

The Hotel Management & Catering sector (accommodation services and food and drinks services) had a turnover of 5 billion 264 million euros in 2013, which was 2.3% more than in 2012, according to data prepared by EUSTAT. Employment was also up by 872 people, an increase of 1.7%, with 53,295 people employed in 2013. However, overall there was a net loss of a little over 60 establishments, or 0.4%, leaving 14,088.

The Food and Drink division, which includes the sub-sectors of Restaurants, Other Food Services and Premises for the Sale and Consumption of Drinks, was the most important in terms of turnover, at 88.4% of the total, and performed the best, with a 2.7% increase in turnover and 2.5% increase in employment. On the other hand, the Accommodation Services division, consisting of the sub-sectors Hotels and Other accommodation, which represented 11.6% of the total turnover, developed negatively, with a slight fall in turnover(-0.5%) and in employment (-4.6%).

At a more disaggregated level, within the division of Food and Drink the activity of Restaurants is the most significant, with 44.1% of total turnover and 41% of employment, improving its turnover figure by 3.5% with respect to the previous year, and increasing its employment by 0.3%. The sub-sector of Premises for the Sale and Consumption of Drinks, with slightly less weight than the previous one, saw its turnover fall by 2.2% with a moderate rise in employment of 0.7%. Finally, in this division the performance of the sub-sector Other Food Services stood out, which includes catering, among other things. Although it only represented 12.6% of turnover and 19.8% of employment, it posted a considerable increase in both employment (11.6%) and in turnover (20.3%).

In the case of Accommodation Services, the Hotels sub-sector lost 5.8% of its employment and 1.4% of its turnover, accounting for 81.5% of the turnover figure and 77.8% of the personnel for that division. On the other hand, the Other Accommodation sub-sector saw its turnover rise by 3.6%, and there was no noticeable change in personnel employed (0.1%).

By province, for the sector as a whole in 2013 the three provinces performed positively in terms of turnover and, with the exception of Bizkaia, in terms of employment too. In turnover, Gipuzkoa, with 35% of sales in the Basque Country, saw its sales rise by 2.5% and its employment by 4.8% in 2013. In Álava there was a 2.9% increase in employment and a 1.6% increase in turnover, accounting for 14% of total sales. The Hotel Management & Catering sector in Bizkaia had a turnover of 2.4% more than in 2012, with sales representing 51% of the total, but employment was down by 0.7%.

An analysis according to the size of establishments in the Hotel Management & Catering sector revealed that microenterprises (with fewer than 10 employees) comprised 94.7% of establishments and generated 64.8% of total turnover with 59.3% of the employed personnel. Small companies (with 10 to 49 employees) represented 5.1% of establishments with 22.8% of employment, and 23.6% of the turnover. Finally, companies with 50 or more employees (medium and large companies) invoiced 11.6% of total turnover, provided employment to 17.9% of people in work and represented 0.2% of all establishments.
